Essential Ingredients of Fish Curry:

To marinate the fish-:

1. Water chestnut fish = 1 kg (clean and wash the fish)
2. salt = 2 pinch
3. Turmeric powder = ¼ tsp
4.Ginger-garlic paste = ½ tsp
 

To make gravy-:

3 Ginger garlic1 Fish – 250 grams2 onion 1 chopped paste 1 tsp 

4 Red chili powder 1 tsp 

5 Tomato puree – 1 cup 

6 Turmeric powder 1 tsp 

7 Lemon juice – 1 tsp 

8 Coriander powder 1 tsp

9 Cumin 1 tsp

10 bay leaf 1

11 Oil – 2 tbsp

12 Green coriander leaves 1 cup

13 curd 250 gram

14 salt According to taste

Instruction

Step 1. To make fish curry, first marinate the fish. Put the washed fish in a bowl. After that, add salt, turmeric powder, and ginger-garlic paste to it, and rub all these things on the fish by hand. So that this masala gets applied to every piece of fish.

 Step 2. After that, take a big pan. In which your fish gets cooked easily. Oil is then added to the pan and kept there for heating. Once the oil is hot, add each piece of fish that has been marinated one at a time.

Step 3. Let the pieces fry for 3 to 4 minutes on medium heat. Then change the side and let it fry for 3 to 4 minutes on this side as well. After that, take out all the fish pieces one by one on a plate. Remove the fish from the oil very carefully, and when turning it, turn it carefully, otherwise the pieces may break. Because the meat of fish is soft.

Step 4. After removing all the fish pieces, put mustard seeds, fenugreek seeds, and celery in this oil and let them crackle a bit. Then add onions to it and fry till the onions turn a very light golden brown.

Step 5.When the onion turns golden brown, add ginger-garlic paste and fry it with a little water. Then slow down the flame. Then you can add these ingredient likes Kashmiri red chilli powder, red chilli powder, salt, coriander powder, cumin powder, and turmeric powder, and mix it.

Step 6. Then add some water to the roasted spices and fry them. Adding water will roast the spices well and will not burn. When the oil starts separating from the spices, it means your spices are roasted.

Step 7. Then you add curd to it, mix it, and cook the curd on a low flame till then. Until the oil starts separating from the spices again, you have to fry the spices very well so that the gravy will become very tasty.

Step 8. When the spices are well roasted and the oil starts separating, add the green chilies to it and mix. After that, add the fried fish and mix very lightly. So that the fish does not break, let it cook on medium flame for 2 minutes.

Step 11. Check the fish after the fixed time, add garam masala powder to it, and mix. Then add kasoori methi and green coriander and mix. Then cover it with a low flame and let it cook for 2 minutes.
